I Hate Brussel Sprouts Casserole

This is how Mom got us to eat brussel sprouts! She would also pour this over baked potatoes for a quick, yummy, and oh yes-fattening side dish. Note: My mother is not a health nut! Enjoy!

1 10oz bag of Brussel Sprouts (cooked until tender and drained)

½ jar of cheese whiz (Feel free to substitute real cheese here. As kids, we loved the cheese whiz. We didn’t know any better!)

1 small chopped onion

½ a green pepper chopped

1 small can or jar of sliced mushrooms drained (I use fresh mushrooms nowadays)

4-6 slices of lean bacon cooked until crisp (reserve the fat)

Italian bread crumb mix used for Grandma D’Angelo’s Stuffed Mushrooms

Saute onions, peppers and mushrooms in reserved bacon fat. Place sprouts in a baking pan and sprinkle with crumbled bacon. Spoon onion, pepper, mushroom mixture on top. Heat cheese whiz and pour over the top. Sprinkle with breadcrumb mixture and bake at 350* for 30 minutes.

Quote from Mom: “Guaranteed to be eaten by Brussel Sprout haters everywhere!”
