Grandma D’Angelo’s Stuffed Mushrooms

 This is one of those dishes that is a must when my family gets together. If my older brother is in attendance, we make extra, so we can all have some too! These mushrooms are great as an appetizer or a side dish (perfect with steak). My mother also uses the stuffing on salads, casseroles, mac & cheese and anything else she can think of.  Enjoy!


12 large mushroom caps peeled with stems chopped off and set aside

8 slices of lean bacon (center cut is great) cooked until crisp (reserve the fat)

1 ½ cups Italian bread crumbs

½ cup grated parmesan cheese

Garlic powder, Italian seasoning, lemon pepper and S&P to taste

1 stick melted butter

Mix dry ingredients, chopped stems and crushed bacon into mixture. Add bacon fat to melted butter and pour over dry mix (the mixture should be moist but not soaked or clumpy). Press into mushroom caps to fill and place into a baking dish.

Bake covered at 350* for 20 minutes and uncovered for 10.


Note: I like to add fresh herbs to mix up the flavors a little. Fresh tarragon and sage are both great! Add the chopped herbs to the dry mix before adding the butter and bacon fat (I just love saying “bacon fat” hehe)
